Try This Delicious Recipe for National Soup Month

Nothing eases the winter blues like a hot bowl of soup on a cold day. January is National Soup Month, which means there’s no better time to cook a steaming pot of soup for your fellow campers. This hearty corn chowder recipe is easy to prepare in a small RV kitchen and is guaranteed to help you stay warm this January.

Sweet Corn Chowder

What you’ll need:

  • 2 ribs celery (chopped)
  • 2 cups milk
  • 2 teaspoons salt
  • 4 cups fresh corn kernels
  • 1 pound boiling potatoes (peeled and diced)
  • 1 red bell pepper (chopped)
  • 2 tablespoons butter
  • 4 scallions (bulbs and green tops chopped and separated)
  • 1 bay leaf
  • 1 quart low-sodium chicken broth
  • 1/4 teaspoon fresh-ground black pepper
  • Sour cream for serving

Cooking instructions:

  1. Melt the butter over medium heat in a large saucepan.
  2. Stir in the celery, bell pepper and scallion bulbs. Stir the vegetables until they begin to soften (roughly 10 minutes).
  3. Stir in the 2 cups of corn, chopped potatoes, chicken broth, bay leaf and salt.
  4. Bring the entire mixture to a boil.
  5. Reduce the heat and let your soup simmer for 15 minutes. Stir occasionally.
  6. Place your remaining two cups of corn in a food processor (or blender), and puree them with the milk until the mixture is smooth.
  7. Stir your corn puree into the saucepan with your soup, then stir in the black pepper.
  8. Allow the soup to simmer for roughly 5 to 10 minutes or until it has slightly thickened.
  9. Remove the bay leaf and stir in the scallion greens.
  10. This recipe yields four servings, so separate the soup evenly into four bowls, and serve with a dollop of sour cream on top.

Seafood Recipes for National Seafood Month

October is National Seafood Month, and that means it’s time to start cooking up some tasty seafood dishes in your RV. Many RV enthusiasts think that seafood dishes can be too difficult to cook within the confines of a small RV kitchen, but these quick and easy meals will make you think otherwise.

Grilled Seafood Skewers

What You’ll Need:

  • 1/2 pound large sea scallops
  • 1/2 pound fresh salmon
  • 1/2 pound fresh prawns (deveined)
  • Oil
  • Metal skewers

Cooking Instructions:

  1. Chop the salmon into bit-size pieces (about the same size as a scallop).
  2. Preheat the grill.
  3. Put the same type of seafood on each skewer to ensure each piece of seafood is properly cooked. Leave enough room on each end of the skewers to use as handles.
  4. Brush the pieces of seafood with oil once they are on the grill.
  5. Cook the shrimp and scallop skewers for roughly 2 minutes on each side or until they are thoroughly cooked.
  6. Cook the salmon skewers for roughly 1 minute on each side or to your preferred temperature.
  7. Serve with your favorite seafood dipping sauce and enjoy.

Foil Baked Salmon with Basil Pesto and Tomatoes

What You’ll Need:

  • 2 salmon filets
  • 2 teaspoons olive oil
  • 5 medium tomatoes (sliced 1/4-inch thick)
  • 4 teaspoons basil pesto
  • Aluminum foil

Cooking Instructions:

  1. Preheat your grill.
  2. Tear two pieces of aluminum foil large enough to wrap your salmon filets.
  3. Place one piece of foil on top of the other and brush 2 teaspoons of oil on the top piece.
  4. Lay the salmon on the foil.
  5. Brush each salmon piece with 2 teaspoons of basil pesto, then place the tomato slices on top.
  6. Wrap the salmon in the foil and place the packet on the grill.
  7. Cook for 15 minutes, then remove the packet and let it sit for roughly 3 minutes before eating.

Ultimate Trail Mix

What You’ll Need:

  • 1 cup dried blueberries
  • 1 cup dried cranberries
  • 1 cup dried apple slices
  • 1 cup dried pineapple
  • 1 cup peanuts
  • 1 cup almonds
  • 1 cup cashews
  • 1 1/2 cups puppy chow
  • 1 cup chocolate chips
  • 1 cup small marshmallows
  • 1 cup peanut butter chips
  • 1 cup white chocolate chips
  • 1 cup butterscotch chips

Preparation Instructions:

  1. Simply mix all of the above ingredients together in a large bowl, then pack into snack-sized Ziploc bags for easy access when traveling.

Kashi Trail Mix

What You’ll Need:

  • 1 cup Kashi crunch cereal
  • 1 cup raisins
  • 1 cup yogurt raisins
  • 1 cup Craisins
  • 1 cup chocolate covered soy nuts
  • 1/4 cup sunflower seeds (without shells)
  • 1/4 cup mini marshmallows

Preparation Instructions:

  1. Mix all ingredients together in a large bowl, then split the trail mix into snack-sized portions in Ziploc bags.

After School Trail Mix

What You’ll Need:

  • 2 cups pretzel rings
  • 1/2 cup dry-roasted peanuts
  • 2 cups sesame sticks
  • 1/2 cup chocolate chips
  • 1/2 cup dried cranberries
  • 1/2 cup yogurt-covered raisins
  • 1/2 cup banana chips

Preparation Instructions:

  1. Combine all of the above ingredients into a large bowl. Stir the ingredients until they’re thoroughly mixed and split into Ziploc bags for easy access.

National Hot Dog Day Recipes

Today is National Hot Dog Day! Hot dogs are a classic must-have for cookouts and barbecues. Anytime there’s a party, the two main staples are hot dogs and hamburgers. Even so, there are lots of variations of this wonderfully delicious food item. Here are a few different ways you can dress them up.

Vietnamese Hot Dog

  • 4 hot dogs
  • ¼ cup Miracle Whip
  • 1 tablespoon Sriracha
  • ½ teaspoon sugar
  • 1 small cucumber sliced thinly
  • 1 large carrot shredded
  • Mint leaves for garnish

Cook the hot dogs either over your campfire or on your Manassas RV grill. In a small bowl, mix together the Miracle Whip, sugar and Sriracha. Place the cooked hot dogs in buns and divide the sauce mixture evenly along with the carrot, cucumber and mint for garnish.

Steak House Dog

  • 4 hot dogs
  • 2 big, plump tomatoes, sliced
  • ¼ white onion, sliced thinly
  • ¼ cup A1 steak sauce

Grill the hot dogs until golden brown or to your preferred liking. Once done, place each hot dog in a bun and add the tomatoes, onions, and finish it off with A1 steak sauce. This is one recipe you will want to make all the time.

The Ultimate Guacamole Dog

  • 4 Hot dogs
  • 1 ripe avocado, peeled and pitted
  • 1 tablespoon freshly squeezed lime juice
  • Salt and black pepper
  • 4 romaine lettuce leaves
  • ¼ red onion, finely chopped
  • Texas Pete hot sauce

Theses hot dogs taste great when boiled. Boil them until they get big and plump. Once cooked, lay them out on a paper towel. Next in a medium bowl, mash your avocado with a fork and add the lime juice and ¼ teaspoon of both pepper and salt. Place a piece of lettuce in the bun then add one of the boiled hot dogs, some of the avocado mixture and chopped onion. Drizzle over it with Texas Pete hot sauce and serve.

Cuban Hot Dog

  • 4 hot dogs
  • 4 thin slices of deli ham
  • 4 slices of deli Swiss cheese
  • 1 cup of sliced dill pickles
  • ¼ cup of Dijon mustard

Heat the grill to medium-high heat and start cooking the hot dogs. To the buns, and add one slice of ham and one slice of cheese and place on the grill. Cover grill and cook until the cheese has melted, this takes about 1 to 2 minutes. Once melted, remove from grill and place the grilled wiener in the bun. Add pickles and Dijon mustard and enjoy. Grill any of these scrumptious recipes up from Reines RV.

July Fourth Dessert Recipes

The Fourth of July is an exciting holiday centered around our country’s freedom. How we celebrate is with cookouts and fireworks. Since food is half the fun, you may be wondering what you can make for a great dessert that everyone will love. If you want something festive this year, be a hit with these two holiday favorites. Both can be made from your Manassas RV.

Patriotic Red White and Blue S’mores

  • One bag of campfire size marshmallows
  • Red food coloring
  • Blue food coloring
  • Graham Crackers
  • One bag or bar of White chocolate Ghirardelli squares

Add a few drops of the red food coloring into one small bowl and add a teaspoon of water. Lightly churn to combine. Repeat this same process with the blue food coloring. Cover the area you plan to work on with tin foil followed by a layer of paper towels. Place both bowls on the tin foil and open the bag of marshmallows. Dip one side of the marshmallow into the red food coloring. Remove and lay on paper towel to dry for 5-10 minutes. Once dry, repeat the same action with the other side, only this time dipping the marshmallow into the blue food coloring. Once completed, slide them onto roasting skewers and grill your Patriotic S’mores to perfection. Remove from flame, slide onto graham cracker and chocolate, smoosh down and enjoy.

Washington’s Parfaits

  • 1 Package of red Jell-O
  • 1 Package of blue Jell-O
  • 1 Container of cool whipped topping, thawed

Start this dessert by boiling two cups of water. Open the gelation packets and place the two colors into two separate large bowls. Once the water is boiled, stir in 1 cup of hot water into each color of gelatin for 2 minutes. Once completely mixed, stir in 1 cup of cold water into each bowl and stir again, mixing everything together. Pour the gelation into 2 separate 8-inch square pans. Refrigerate up to 5 hours or until firm. When set, slice each gelatin pan into ½-inch cubes. Grab your Parfait cups and start layering the colors. Start with red jello cubes followed by cool whipped topping and finish with the blue jello cubes on top.

Quick Snacks for the Road

It’s getting close to the time for your summer RV vacation – you probably have reservations made and are making a list of things to pack. In addition to the fishing poles, toys to load in the toy hauler, clothing, fishing gear and food for the RV, you’ll need some snacks for the road, especially if you are going to be driving for more than a few hours.

Pack a cooler if you don’t have access to the refrigerator in a motorized RV. Keep plenty of drinks in the cooler. Be sure to leave room for snacks that might need to be refrigerated. If you do plan on stopping, you can pack them in the fridge in your Reines RV. Pack them in shallow, air-tight plastic containers and set them on top of the ice, keeping the drinks below.


This recipe can be adjusted to the number of people you are serving, so does not contain amounts.

  • Flour tortillas
  • Deli ham or turkey
  • Cream cheese, softened
  • Green onions, diced
  • Green olives, diced

Beat the cream cheese until fluffy. Fold in the diced olives and green onions. Spread the mixture on one side of the tortillas. Add one or two layers of ham, depending on the thickness of the ham. Tightly roll the tortilla. Cut into 1-inch slices. Pack them into a covered shallow, airtight bowl.

Cucumbers and Chipped Beef Dip

  • 1 8-ounce package cream cheese
  • ½ cup sour cream
  • 2 T. milk
  • 1 ½ tsp. Worcestershire sauce
  • 1 green onion, finely diced
  • 3 ounces dried beef, diced
  • Salt and pepper to taste
  • Cucumbers

Whip cream cheese until soft. Add the sour cream, milk and Worcestershire sauce. Mix until thoroughly incorporated. Fold in green onions and dried beef. Mix in salt and pepper to taste. Be sure you taste it before adding more salt as the chipped beef is pretty salty to begin with. Put the dip in the fridge while you prepare the cukes.

Cut the ends off the cukes. Using a potato peeler or sharp knife, peel the cukes in stripes. You’ll have a strip of unpeeled cuke alternating with a strip of peeled cuke. Slice the cukes in half lengthwise. Scoop out all of the seeds and discard.

Pack the hollowed out sections of the cukes with the dip. Cut into bite-sized pieces and store in a shallow, airtight container.

Mother’s Day Breakfast on the Road

Every mom deserves a nice, long break from her daily routine. So for this Mother’s Day, why not begin her well-deserved day of rest by making her a delicious and nutritious breakfast to keep her energized all day? Here are a few great breakfast recipe ideas you can make right from your Manassas RV to get your Mom on her way to enjoying a wonderful morning.

Blueberry Cheesecake Pancakes

  • 1 3-ounce package cream cheese, softened
  • ¾ cup of whipped topping
  • 1 cup of all-purpose flour
  • ½ cup of graham cracker crumbs
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 eggs, beaten
  • 1 ¼ cups of buttermilk
  • ¼ cup butter, melted
  • 1 cup fresh or frozen blueberries

Start out by making the topping. In a small bowl, beat together the cream cheese and whipped cream topping until smooth and chill until ready to serve.

Now, in a large bowl, combine the flour, graham cracker crumbs, sugar, baking powder, baking soda and salt. Using another bowl, mix together the eggs, buttermilk and butter. Add this mixture to the dry ingredients until moistened. Fold your blueberries into the batter.

Pour the pancake mix onto a pre-greased, hot griddle using a ¼ cup measuring cup. Let each cake cook until bubbles form on top. Flip and cook until the bottom is a golden brown. Once finished, spread your cream cheese mixture over the pancakes making sure to top with warm syrup.

What goes better with pancakes than a tasty Fruit Salad? Here is a fast recipe to add with your Mother’s Day pancakes.

  • 1 kiwi
  • 1 mango
  • 1 papaya
  • 2 bananas
  • 1 pint of strawberries

Start by peeling and slicing your kiwis. Slice the strawberries, making sure not to use the stem. Dice the papaya along with your mangos and bananas. Place together in a large bowl and gently mix the fruits together. It’s just that easy and you’re ready to serve alongside the pancakes.

An Irish Meal for St. Patrick’s Day

Whether you’re traveling to a St. Patrick’s Day festival or are planning to enjoy the holiday in your RV, these simple Irish recipes are certain to make your St. Paddy’s Day feel a lot more authentic.

Irish Colcannon

What You’ll Need:

  • 1 pound of potatoes
  • 2 parsnips (peeled and sliced)
  • 2 leeks
  • 1 pound kale
  • 1 cup milk
  • 2 cloves garlic (minced)
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon mace
  • 1/2 teaspoon pepper
  • 2 tablespoons butter
  • 1 bunch parsley (chopped)

Cooking Instructions:

  1. Boil potatoes and leeks together in a large pot until tender.
  2. Chop leeks and simmer them in a skillet with milk until soft.
  3. Chop kale and saute in a separate skillet until fully cooked.
  4. Drain potatoes and season them with salt, pepper, garlic and mace, then smash them until the mixture is smooth.
  5. Add leeks, milk, kale and butter to the potato mash and stir the combination until the vegetables are mixed throughout.
  6. Garnish each serving with parsley and enjoy.

Blarney Stone Bars

What You’ll Need:

  • 2 eggs
  • 1 tablespoon milk
  • 1/2 cup butter (softened)
  • 3/4 cup brown sugar
  • 3/4 cup all-purpose flour
  • 3/4 cup instant oats
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup English toffee bits
  • 4 drops green food coloring
  • 1/3 cup pecans (chopped)
  • 3/4 cup vanilla frosting

Cooking Instructions:

  1. Preheat the oven to 350.
  2. Mix butter and sugar in a large bowl, then beat in milk, vanilla and eggs.
  3. In a separate bowl, mix the flour, oats, baking powder and salt together, then add the dry mixture to the creamy one.
  4. Stir in pecans and toffee bits.
  5. Pour the combined mixture into a 9-inch baking pan and bake for 20-24 minutes.
  6. Stir food coloring into the frosting, and spread it on top of the bars once they’ve cooled.

A Valentine’s Day Dessert: White Chocolate Raspberry Cheesecake

Whether you’ve got elaborate dinner plans for Valentine’s Day or you’ll be staying in for the evening, nothing says “I love you,” like a delicious homemade dessert. Try baking this romantic and incredibly tasty white chocolate raspberry cheesecake for your special someone, and it’s bound to be a Valentine’s Day to remember.

What You’ll Need

  • 1 cup chocolate cookie crumbs
  • 5 tablespoons white sugar
  • 1/2 cup half-and-half
  • 1/4 cup melted butter
  • 1 package frozen raspberries (10 ounces)
  • 2 teaspoons cornstarch
  • 1/2 cup water
  • 3 packages softened cream cheese (8 ounces)
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups white chocolate chips
  • 1/2 cup additional white sugar

Cooking Instructions

  1. Preheat the oven to 325 degrees.
  2. Mix the cookie crumbs, 3 tablespoons sugar and the 1/4 cup melted butter together in a medium bowl.
  3. After stirring, press the mixture along the bottom of a 9-inch pan to create a crust for your cheesecake.
  4. Combine the raspberries, 2 tablespoons sugar and 1/2 cup water in a saucepan and bring it to a boil. Boil for five minutes, then strain it to remove the seeds.
  5. In a separate bowl, melt the white chocolate chips with 1/2 cup of half-and-half until the mixture is smooth.
  6. Mix the cream cheese and 1/2 cup sugar together in a large bowl until it is creamy and smooth, then beat the eggs in one at a time.
  7. Add the vanilla and melted white chocolate into the large bowl and pour half of the mixture on top of your crust.
  8. Spread 3 tablespoons of your raspberry sauce over the top of the batter, then pour the rest of the batter on top.
  9. Spread another 3 tablespoons of your raspberry sauce over the cheesecake and bake it for 55-60 minutes.
  10. Cool the cheesecake in the refrigerator for 8 hours, then top it with fresh berries or more raspberry sauce before serving.

Healthy Teas to Try for Hot Tea Month

Tea lovers rejoice! January is National Hot Tea Month, which means it’s time buy that extra special tea you’ve been wanting and curl up by the fire to sip it. If you’re not sure which teas to try this month, these simple recipes should be enough to start you in the right direction.

Crock Pot Chai Tea Latte

Brewing tea in a crock pot may sound ridiculous, but you’ll love the idea when you taste this homemade chai tea latte.

What You’ll Need:

  • 4 cups water
  • 4 cups store-bought coconut milk
  • 1/2 cup loose-leaf black tea (equivalent to 8 tea bags if you don’t have loose leaf)
  • 6 cinnamon sticks
  • 8 slices fresh ginger (very thinly sliced)
  • 2 tsp stevia leaf
  • 8-10 cloves
  • 1 tsp vanilla extract


  1. Add the water, herbs and spices to the crock pot. Wrap the herbs and spices in a reusable tea bag if possible.
  2. Turn crock pot to high and cook for two hours.
  3. Add coconut milk and stir until the entire contents of the pot are heated.
  4. Serve and enjoy.

Lavender Mint Tea

While lavender certainly smells wonderful, it’s often difficult to imagine drinking something with such a strong scent. Try this delicious yet subtle lavender tea recipe, and you’ll have an entirely new appreciation for the lavender plant.

What You’ll Need:

  • 2 tbsp dried lavender
  • 1/2 cup mint leaf


Mix the lavender and mint in a dry, air-tight storage container. When making your hot tea, use one or two teaspoons of the lavender and mint mixture for every one cup of hot water. This lavender mint tea tastes delicious as an iced tea as well.
