Try This Delicious Recipe for National Soup Month

Nothing eases the winter blues like a hot bowl of soup on a cold day. January is National Soup Month, which means there’s no better time to cook a steaming pot of soup for your fellow campers. This hearty corn chowder recipe is easy to prepare in a small RV kitchen and is guaranteed to help you stay warm this January.

Sweet Corn Chowder

What you’ll need:

  • 2 ribs celery (chopped)
  • 2 cups milk
  • 2 teaspoons salt
  • 4 cups fresh corn kernels
  • 1 pound boiling potatoes (peeled and diced)
  • 1 red bell pepper (chopped)
  • 2 tablespoons butter
  • 4 scallions (bulbs and green tops chopped and separated)
  • 1 bay leaf
  • 1 quart low-sodium chicken broth
  • 1/4 teaspoon fresh-ground black pepper
  • Sour cream for serving

Cooking instructions:

  1. Melt the butter over medium heat in a large saucepan.
  2. Stir in the celery, bell pepper and scallion bulbs. Stir the vegetables until they begin to soften (roughly 10 minutes).
  3. Stir in the 2 cups of corn, chopped potatoes, chicken broth, bay leaf and salt.
  4. Bring the entire mixture to a boil.
  5. Reduce the heat and let your soup simmer for 15 minutes. Stir occasionally.
  6. Place your remaining two cups of corn in a food processor (or blender), and puree them with the milk until the mixture is smooth.
  7. Stir your corn puree into the saucepan with your soup, then stir in the black pepper.
  8. Allow the soup to simmer for roughly 5 to 10 minutes or until it has slightly thickened.
  9. Remove the bay leaf and stir in the scallion greens.
  10. This recipe yields four servings, so separate the soup evenly into four bowls, and serve with a dollop of sour cream on top.

Seafood Recipes for National Seafood Month

October is National Seafood Month, and that means it’s time to start cooking up some tasty seafood dishes in your RV. Many RV enthusiasts think that seafood dishes can be too difficult to cook within the confines of a small RV kitchen, but these quick and easy meals will make you think otherwise.

Grilled Seafood Skewers

What You’ll Need:

  • 1/2 pound large sea scallops
  • 1/2 pound fresh salmon
  • 1/2 pound fresh prawns (deveined)
  • Oil
  • Metal skewers

Cooking Instructions:

  1. Chop the salmon into bit-size pieces (about the same size as a scallop).
  2. Preheat the grill.
  3. Put the same type of seafood on each skewer to ensure each piece of seafood is properly cooked. Leave enough room on each end of the skewers to use as handles.
  4. Brush the pieces of seafood with oil once they are on the grill.
  5. Cook the shrimp and scallop skewers for roughly 2 minutes on each side or until they are thoroughly cooked.
  6. Cook the salmon skewers for roughly 1 minute on each side or to your preferred temperature.
  7. Serve with your favorite seafood dipping sauce and enjoy.

Foil Baked Salmon with Basil Pesto and Tomatoes

What You’ll Need:

  • 2 salmon filets
  • 2 teaspoons olive oil
  • 5 medium tomatoes (sliced 1/4-inch thick)
  • 4 teaspoons basil pesto
  • Aluminum foil

Cooking Instructions:

  1. Preheat your grill.
  2. Tear two pieces of aluminum foil large enough to wrap your salmon filets.
  3. Place one piece of foil on top of the other and brush 2 teaspoons of oil on the top piece.
  4. Lay the salmon on the foil.
  5. Brush each salmon piece with 2 teaspoons of basil pesto, then place the tomato slices on top.
  6. Wrap the salmon in the foil and place the packet on the grill.
  7. Cook for 15 minutes, then remove the packet and let it sit for roughly 3 minutes before eating.

Dollar stores are some of the best places to find cheap Halloween decorations that won’t break your travel budget. Dollar Tree offers tons of flags, banners, streamers, and paper decorations that can turn your RV into a Halloween hotspot for just a few dollars. Other fun decorations, like pumpkins and gourds, can be purchased at local farmer’s markets.

Throw Your Own Festivities

You don’t have to rely on your campground to throw a fun Halloween party. Host a costume party outside of your RV for all of the other campers at the RV park. Goodwill and the Salvation Army are great places to shop for used costumes or vintage clothing that can be used for costumes on the cheap. Ask each of your fellow campers to bring a special Halloween snack, to help you save money on hosting the event.

Bicycle Tour of Manassas

Not sure how to spend your Columbus Day weekend? Bike your way over to the Manassas Museum on Saturday, October 11 at 9am. Enjoy a fall bike ride while learning about Civil War sites, how the area has changed, and perhaps uncover unknown facts. Though not required, helmets are strongly recommended. Admission is $5 and also includes a day pass to the museum. Please arrive 15 mins before departure time.

Pre-K Tuesday – Changing Colors

This event will be on October 14 from 10am until 11am for children ages 3-5. This gives pre-schoolers the unique opportunity to explore and learn through games, stories, crafts and other fall-themed activities. Registration is recommended and an adult must be present. Admission is $10 per child.

Manassas Cemetery Tours

Discover who is buried within the Manassas Cemetery on Friday, October 17. During this tour, you will learn the rich history of the people who came before us and what they meant to our community. It’s recommended to bring a flashlight and wear comfortable clothes and shoes. A small fee of $5 will be collected.

What’s Under Your Feet?

This special exhibit at the Manassas Museum runs from October 24, 2014 until February 15, 2015. It will use artifacts from the Manassas Museum combined with images to discuss the importance of archaeology and how it tells us about our past. The primary focus will be on artifacts that have been recovered from the historic areas of Manassas.

Spirits of Manassas Walking Tour

This tour will be on Saturday, October 25 at the Manassas Museum. Follow fully costumed guides by lantern light through the streets of town. Learn of the unexpected stories that took place within this city. Discover the people who helped shape it into what it is today. You will hear how Civil War soldiers took their last breaths on the Plains of Manassas along with other spirited Halloween stories. Pre-purchased tickets are recommended as space is limited.

Oktoberfest in Virginia

Oktoberfest Reedville

This year mark’s Reedville’s fifth Oktoberfest, and it’s guaranteed to be bigger and better than ever. Combine bratwursts with tasty German beers, homemade sauerkraut, giant soft pretzels, polka dancing, antique car rides and tons of exciting activities for the entire family, and you’ve got one of the best Oktoberfests in the state. The event will take place on Saturday, Oct. 11, from 12 p.m. to 4 p.m., and admission is free.

Richmond Oktoberfest

Celebrate German heritage at one of Virginia’s largest Oktoberfest Celebrations. The Richmond Oktoberfest is on its 46th year, and it has become one of the city’s most anticipated yearly events. Bavarian dancers, the crowning of the Oktoberfest queen, tasty German foods, Bavarian beers, wine and tons of other German-style treats and activities will be available for the entire family. The party starts on Friday, Oct. 17 and extends through Saturday, Oct. 18 at 11 p.m.

Martinsville Uptown Oktoberfest

The Oktoberfest International Arts and Culture Festival in uptown Martinsville is one of Virginia’s most authentic and unique Oktoberfest celebrations. Two streets will be blocked off for everything from fine art to kid-friendly bounce houses. Tons of food vendors, crafters, artisans and craft beer sellers will flood the streets to celebrate this showcase of art and German culture. The event will take place on Saturday, Oct. 4 from 11 a.m. to 4 p.m.

Cedar Creek and Belle Grove National Historical Park

Nestled in the Shenandoah Valley of Northern Virginia, the Cedar Creek and Belle Grove National Historic Park offers deep American history coupled with breathtaking outdoor scenery that simply shouldn’t be missed. These national park grounds served as a home for Native Americans, pioneers and soldiers that fought in the Battle of Cedar Creek. If you haven’t visited the Cedar Creek and Belle Grove National Historic Park in Virginia yet, you’d better start planning your RV getaway today.

Things to Do at the Park

The Cedar Creek and Belle Grove National Historic Park serves to protect the Belle Grove Plantation, the site of the Battle of Cedar Creek and the gorgeous Shenandoah Valley. Visitors can enjoy the Cedar Creek and Belle Grove NHP Visitor Contact Station, the Belle Grove Plantation Manor House, the Hupp’s Hill Civil War Park and the Cedar Creek Battlefield Plantation Headquarters.

Rangers conduct a number of regular programs to teach visitors about the rich history of the area, and a number of movies, tours and orientation programs are open to the public. The extensive list of events for the fall of 2014 are listed on the national park’s website, so you can plan your trip according to your interests.

Park Hours and Fees

The Cedar Creek and Belle Grove NHP does not charge any fees to its visitors, and the numerous ranger programs are open to the public as well. Non-park visitor facilities like the Cedar Creek Battlefield Foundation and Belle Grove Plantation are not part of the national park’s non-profit organization and may charge a fee for entry.

The National Historic Park is open daily from 9 a.m. to 4:30 p.m., but it is closed Thanksgiving, Christmas and New Years Day. The Belle Grove Plantation and Cedar Creek Battlefield Foundation may operate on different hours than the national park, so check their individual websites before visiting.
