3 Camping Dishes for St. Patrick’s Day

May your pockets be heavy, your heart be light, and your stomach be full on this St. Patrick’s Day! While the traditional Irish dishes are delicious and a must-have on this holiday, it’s hard to fully celebrate when your resources are limited by traveling in an RV. You probably have the green shirt and decorated RV down, but how can you have an entire Irish feast when you’re camping out?

Luckily, we have 3 RV-friendly Irish recipes that are perfect for St. Patrick’s Day.

The Irish Stew

Irish stew, made with lamb, stout, potatoes, carrots and herbs.

With a dish that has meat, vegetables and warm, delicious broth, you can’t go wrong with this satisfying and easy meal. Camping Roadtrip says all you need is:

  • 2 tbsp vegetable oil
  • 4 large onions
  • 5 large carrots
  • 1 1/2 pound steak
  • 6 large potatoes
  • 1 cup water
  • salt and pepper

First you heat the oil in a large skillet. Cut the onions in wedges and saute them. Cut the carrots in thick slices and cook for a few minutes. Then you cut the steak into 1/4 inch cubes and add it to the vegetables. Wash, peel and slice the potatoes and throw them with the meat and vegetables. Pour in the water and sprinkle salt and pepper and wait for the stew to boil. Simmer the stew over low heat until everything is tender,

Irish Campfire Potatoes


This dish, thanks to Daily Leisure, is the ultimate go-to for St. Patrick’s Day. This mean can be cooked on a grill, over a fire, or in an oven if your rig has one. All you need is:

  • 1 1/2 lb of red potatoes
  • 1 large onion
  • 1 tbsp minced garlic
  • 4 tbsp butter
  • 2 tbsp Worcester Sauce
  • 1/8 tsp Cayenne Pepper
  • salt and pepper

The first thing you do is slice the potatoes and onion up into 1/4 slices. Place the slices on aluminum foil large enough to fold over and roll the edges up. Make sure you top the potatoes and onion generously with butter, garlic, cayenne and Worcester sauce. Fold the foil and leave on the grill or over the campfire for 30 minutes. If using an oven, cook the potatoes at 350 for 40 minutes.

Corned Beef Hash

This meal is a traditional Irish dish and luckily can be easily made in an RV. According to Valerie’s Kitchen, all you need is:

  • 2 tbsp olive oil
  • 1 large onion
  • 1 green bell pepper
  • 1 tsp minced garlic
  • 3 gold or red potatoes
  • 1/2 tsp dried thyme
  • 2 1/2 c cooked and chopped corned beef
  • 4 eggs, fried or poached
  • 1 tbsp of fresh parsley
  • salt and pepper

First, you heat the olive oil on medium in a large skillet. Dice the onion and bell pepper and add to skillet for about 5 minutes, stirring occasionally. Add the garlic for another minute. Throw in the potatoes and start seasoning with thyme, salt and pepper. Let the mixture cook for another 5 minutes. Finally, add the corned beef and heat until it has warmed up. Flatten the hash with a spatula and serve an egg over each portion.
